You can easily give a new side another MCV, the problem is that the AI will not deploy it. This can be fixed by modifying the exe to make BuildConst= accept more than one entry, allowing the AI to BuildConst=NormalMCV, OtherMCV, POD, or similar.

There are a few songs about it, if you're interested, but afaik nobody has actually fixed BuildConst.

Well, with a workaround, you should be able, but it would b quite limited.
Clone the MCV on the map, give it Sight=0, then place it near the start location, give it the owner=Nod/GDI tag and finally apply the deploy function.
Though its quite useless anyway^^

As the others have said AI does not understand more than 1 MCV / con.yard. You mentioned you tried to create a new country for Nod but it crashed? Did you leave the default MCV / con.yard for the AI only side and use a seperate MCV for your new side? If done correctly that should work without problems.
