I want to customize the main menu with new graphics and music, does anyone know what I would have to do?

Also, how would one convert a video file to be used in the game as a cutscene introducing a custom mission?

really new graphics or just other textures?
music and how the menu is set up is handled via Apt, so you have to take a look at jonwil's tools
