I want to have a plane in my mod that drops crates. So what im asking is are there any ways to do this and if so how?

Impossible. Unless you have Rockpatch or NPatch (maybe the upcoming Ares, not sure), which lets you paradrop vehicles. Then I have an (untested) theory:

1. Have the plane drops dummy SHP units, with a working SHP image of the crate, but converted to unittem.pal and other adjustements made so it will work allright as a unit image.

2. Ensure these following tags are present and set to these values on your dummy unit:
CarriesCrate=yes
TechLevel=-1
OpportunityFire=yes
GuardRange=255
Speed=0

3. Have this unit use a weapon with range=255, 1 damage, some very small % on the warhead verses, some dummy anim, and finally Suicide=yes

Still, this is untested, just an idea. There may be bugs.

This partially works and I have done it but it requires a lot of hacky shit to make it work, and modified maps. This cannot be done without modifying maps and vehicle paradrops.

I'm pretty sure all you need to do for this is to make a team of say one of those trucks that break into crates, change their locomotor to something else, like water, and have them come into the map by plane.

But yeah, its a map only thing without npatch.

It takes a little more than just trucks that drop crates. Even with NPatch, there's a map edit you need to make. It's not hard to figure out what, though.

is it possible to make infantry auto deploy?

if so, make it deploy into a dummy building with an instant deathweapon, and give the building crateunderneath.

EDIT:
see if deploytofire makes it happen, it's supposed to be vehicle only, but it's worth a shot.

That won't work very well, and it's too cumbersome to use. The way this is done is the same way as any parabomb drop. However, it must be a vehicle and this requires the NonsensePatch or map triggers, in addition to an additional map tag.

TruckCrates only work in SP at least for YR, some testing was done on this, including map settings.
