But what is the name of the text C&C uses?

Chisel something..
Chisel Regular? I can certainly remember that it was Chisel.

EDIT: Chisel Thin is what I've got here. Last I checked it was quite easy to find.

So what do I do about the "&" character, do I modify it myself or is that a different text?

Chisel Regular is the Tiberian Sun typeface.
Futura Extra Bold (...one of the bold family) is the classic C&C logo and Red Alert 1 and 2 typeface.
Square 721 Bold Extended is for the new generation C&C logo.
And TypefaceSix is the Red Alert 3 typeface.

The ampsand is a edit of the typefaces "&" symbol.

Any idea about Generals and Renegade logos?

Generals is custom, so is Renegade. Incursion logotype was based on a typeface, but i can not find it, could be internal WW/EA typeface.

Generals and Renegade are not hard to reproduce in Photoshop, even easier in a vector based application.
