There's already some engineer recolors (which I am using) for the factions like having different pants.
But you can do engineers however you want, even using different sprites entirely and giving them attacks and abilities (the attacks won't interfere with capture ability, at least if they can't attack buildings. As far as I remember, only something like C4 or Spy Infiltration interferes)
Basically any infantry can be engineer, if you just give Engineer=yes _________________
The simplest way is to do a subtle recolor of the existing ones, then differentiate them through their abilities.
You can do things like giving each faction's engineer a unique ability - one could be given the ability to hijack enemy vehicles, the other could repair own vehicles, and another could sabotage uncapturable buildings, for example.
Or you could play around with their Strength and Speed values to make using each a unique experience with trade offs and balances. The fastest of the 3 gets to capture tech buildings ahead of the others, but the strongest, slow dude could perhaps survive just long enough to reach a defended building, while the middle-ground man would be the most versatile.

I think plenty mods have already done this (including my own) and while better than just having all engineers be copy paste, would not be much novel to go with a totally new appearance. _________________
